Rozella's Potato Salad
A recipe that will keep your cabin neighbors coming back for more!

In the February 2013 issue of Cabin Life,
Christy Heitger-Ewing wrote about her mom's beloved potato salad and
how it became a staple at their annual cabin picnic. Here's the recipe:
7–8 medium-size potatoes
½ onion, chopped (optional) 4–5 hard-boiled eggs 8 heaping tablespoons Miracle Whip Light 3 tablespoons yellow mustard
¼ cup milk
⅓
cup sugar Salt and pepper to taste Paprika
Boil
potatoes with skins on, then peel when cooked. Chop potatoes, onions and
2–3 of the eggs. Mix together in a large bowl. In a separate bowl, mix
Miracle Whip, mustard, milk, sugar, salt and pepper. Pour sauce over the
potato mixture and combine well. Slice the remaining 1–2 eggs and
arrange on top of potato salad. Sprinkle with paprika. Refrigerate until
ready to serve. |
