Veggie Spanish Rice

This stick-to-your-ribs side dish pairs perfectly with the Portobello burgers. Serves 4.

INGREDIENTS
1     package Spanish rice (90-second type)
½     cup chopped onion
½     cup green bell pepper
1    can black beans

DIRECTIONS
1. Sauté onion and green bell pepper until soft; drain black beans well and add to mixture.
2. Prepare rice according to package directions, add onion, pepper and black beans.
