To Smoke or Not To Smoke?
Common spice additions are garlic powder, black pepper, Cajun spice and red pepper flakes, but you can add any spice or herb you think would go well with your catch. Mixing and matching various herbs and spices sometimes yields phenomenal results. But, if you’re new to smoking fish, it’s wise to begin with a basic “wet” brining recipe.
