Pineapple-Scallion Salad Recipe

For your next chili dog dinner, add this pineapple-scallion salad as a side for a well-rounded meal.

Total time: 15 minutes
 
 
Ingredients:
  • 1 fresh pineapple, peeled, cored, sliced into 1"-thick rings
  • 1/2 cup plain yogurt
  • 1 T. brown sugar
  • 2 t. fresh lime juice
  • Sliced scallions  
Instructions:
  1. Preheat grill to medium-high.
  2. Grill pineapple until grill marks appear, 3 minutes per side. Remove from grill and cut into 2" pieces.
  3. Whisk yogurt, sugar, and lime juice together in a small bowl; pour over pineapple chunks.
  4. Garnish with scallions.
