INGREDIENTS
- 3 strips thick-sliced bacon, diced
- 1 cup onion, diced
- 1/4 cup bourbon
- 2 cans red beans, drained, rinsed (15 oz. each)
- 1 cup tomatoes, chopped
- 1/4 cup ketchup
- 2 T. Worcestershire sauce
- 2 T. brown sugar
- 1 T. molasses
- 1 T. prepared yellow mustard
- 1 t. Tabasco
- Red and/or green bell pepper, minced
INSTRUCTIONS
Saute bacon in a large saute pan over medium heat until crisp. Add onion and cook until softened, 3–4 minutes.
Off heat, deglaze with bourbon. Return pan to burner and simmer until bourbon is nearly evaporated. Stir in remaining ingredients (except bell pepper), bring to a boil, reduce heat to medium-low, and cook 5 minutes. Garnish beans with bell pepper before serving.
