Noodle Salad

Simply and delicious, this noodle salad is a great pairing with any Asian-inspired entree.

Makes 4 cups
Total time: 20 minutes
  • 1 package yakisoba or ramen noodles (7.7 oz.)
  • 1 cup sugar snap peas, blanched
  • 1/2 cup red onion, slivered
  • 1/2 cup carrot, sliced into thin strips
  • 1/2 cup red bell pepper, sliced into thin strips
  • 1/2 cup fresh bean sprouts, rinsed
  • 2 T. fresh cilantro leaves
  • 1/2  cup reserved marinade, left
  • Chopped cashews
Prepare noodles according to package directions, omitting seasoning packet (if included). Drain; let cool in a large bowl. Combine noodles with remaining ingredients (except cashews) and toss to coat with marinade. Sprinkle cashews on salad before serving.
