Triple Berry Cobbler

This triple berry cobbler recipe is the perfect summer dessert.

Makes: one 8" pan
Total time: 1 hour + cooling
  • 1/4 cup cranberry juice
  • 2 T. cornstarch
  • 1 T. fresh lime juice
  • 6 cups mixed frozen berries (raspberries, blueberries, and blackberries)
  • 1 cup sugar
  • Pinch of salt
  • 1 t. vanilla extract
  • 1/4 t. almond extract
  1. Whisk cranberry juice, cornstarch, and lime juice together in a saucepan.
  2. Add berries, sugar, and salt; stir to coat and bring to a boil over medium heat.
  3. Reduce heat and simmer until mixture thickens, 2–3 minutes; off heat, stir in both extracts.
  4. Proceed with topping and baking cobbler as instructed, left.
